Fruit Muffins

These are a staple in our house.  I make atleast 1 batch a week.  They are great for using up the fruit right as it starts going bad.  (It always happens to us that once it starts to go bad, it goes bad fast.  Boo)  I got the recipe from a 'Fresh from Florida Kids' book.  I got a kit for free months ago.  Don't even remember why and hadn't really looked at the book until a few weeks ago.  These muffins looked good and healthy so we tried them out.  Love.  The boys really love them too.  I make mini muffins, freeze them in groups of 6 or 7 and they make a perfect grab bag on our way out for errands.

dry ingredients:
1 cup whole-wheat flour
1 cup oatmeal
3 Tbsp sugar
1 tsp salt
4 tsp baking powder

wet ingredients:
1 cup fruit, chopped (we have used blueberries, strawberries, smashed bananas and they have all tasted      great.  we have a mango and only the boys like it so I'm going to make them mango muffins today)
1 egg
1 cup milk
1/4 cup vegetable oil

prep:
*preheat oven to 400*
*mix flour, oatmeal, sugar, salt and baking powder in large bowl.  add fruit.
*in another bowl, break egg and slightly beat with fork.  add milk and oil to egg and mix.
*add egg mis to dry mis.  mix until slightly lumpy
*spray muffin tin, fill each cup 2/3 full.  bake 20 min.

Vietnamese Dinner

When Dan and I went to Chicago a couple years ago, we had this amazing Vietamese dinner in Linkin Park. It was so awesome. Dan requested it, so I looked online and found some pretty good recipes. Wow so yummy!

chocolate banana muffins

I used this recipe and they were a big hit. I made them swirled first, then decided it was to much work so the next batch I just mixed the chocolate and banana mix together. came out just as tasty.

ps- love that site. we have made the pizza bites too and Landen loved them.

Pistachio Pesto

1 c packed spinach
1/4 c olive oil
1/4 c shelled pistachio nuts
1/4 c grated parmesan cheese
1/2 tsp salt
1 clove garlic,quartered
12 oz dried pasta, cooked and drained (I usually use the abc or stars pasta--whatever is fun and easy for Naomi to use a fork vs fingers!!)

Put spinach, oil,nuts,cheese,salt, and garlic in food processor. Process until smooth. Toss with past and serve.

It is always a hit with Naomi. Very easy and yummy.
I think I got the recipe from Parenting magazine.

Aunt Rita's Peach Yogurt Muffins

These are so yummy. They are a family recipe from my great Aunt.

2 1/2 cup flour
1 cup sugar
2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
3/4 cup butter, melted (oh yeah baby)
3 beaten eggs
1 8 ounce peach yogurt (I used yoplait)
1/3 cup milk
1 1/2 cup pitted peaches, diced (3 med)

Crumb topping:
In a small bowl, combine 3/4 c flour, 1/2 cup brown sugar, 1/2 tsp cinnamon. Cut in 1/4 cup of butter until mixture resembles coarse crumbs.

In a large bowl stir together ingredients. Spoon the batter into well greased muffin pans. Sprinkle with crumb topping. Bake at 350 for 25-30 minutes. Cool for 10 minutes and remove from pans. Enjoy!

apricot chicken.  a favorite in our house.  super easy.  tastes amazing.
 we serve it with rice and usually broccoli.  hardly ever leftovers.  we all love it.

granola bars

My cousin posted this recipe on fb one day.  These are super easy to make and very yummy.  I've made both versions (raisin and chocolate chip) and we like both.
A few little notes:
  *I usually freeze half at a time.  Let them cool completely and stick them in a freezer safe bag.  Easy to pull out 1 or 2 at a time.
  *I made them with 1/4 brown sugar.
  *I used a 50/50 flour mixture for the raisin ones
